West Cork Distillery was founded in 2003 by John O’Connell, Dennis and Ger McCarthy in Union Hall, County Cork.
Ten years later the distillery was moved to Skibbereen, where it operates to this day. The company uses only locally grown grain for spirit production and malts some of its barley. West Cork is primarily focused on whiskey production, which currently accounts for 95% of the business, while its Garnish Island Gin makes up remaining 5%. The gin was created by Deirdre Bohane, gin distiller for West Cork Distillers, inspired by her childhood trips to Garnish Island and its exotic gardens. We do not know all botanicals included in the formula, we can only rely on the company’s statement: “the botanicals have been carefully selected to create a classic gin that exhibits light floral notes of hibiscus, iris and rose matching beautifully with rosemary and thyme; this is complimented by luscious hints of dark chocolate and strawberry.“
Garnish Island is extremely floral gin with lovely herbal notes and juniper plying secondary role. On the palate however the herbal and juniper notes are more straightforward notably softening the florals. We recommend serving it with Indian Tonic garnished with a wedge of lime.
