The Don Papa brand name is a tribute to a historical figure who fought for the liberation of the Philippines from Spanish rule in the late 19th century, Dionisio Magbuelas, commonly known as Papa Isio.
The brand was created by Stephen Carroll for the Bleeding Heart Company. Produced on the Philippine island of Negros, it is considered the world's first single island rum from the Philippines. Don Papa Sherry Cask rum is made from sugar cane from the island of Negros in the Philippines, distilled in traditional pot stills and aged in oak barrels after American bourbon. The rum is then poured into a so-called wood finish into four different types of sherry barrels - Pablo Cortado, Fino, Cream and Pedro Ximenez. The total maturation period of the distillates is 5.5 years.
Nose : Rich and fruity, with notes of dried plums, raisins, cinnamon and walnuts.
Taste: Complex, smooth, with notes of dried fruit, chocolate, dried plums, spices.
Finish : Long, with notes of nuts and spices.
