Shinjiro Torii started construction of Yamazaki Distillery in 1923 and the distillery was in full operation the following year.
The distillery sits on the outskirts of Kyoto and has access to top quality water (three rivers – Katsura, Uji and Kizu – merge very close to the site). The distillery started with a single pair of stills but over time expanded, and today there is eight pairs of stills of different shape and size producing over 8 million liters of spirit per annum. Yamazaki produces malt whisky of various characters using unpeated malt as well as peated up to 40ppm phenols. The 18 years old expression, a vatting of sherry, bourbon and Mizunara oak casks, was introduced in 1992 and scored number of medals and awards. The most prestigious one was Double Gold at the 2015 San Francisco World Spirit Competition. The 2019 edition was composed from bourbon, sherry and Mizunara oak casks.
Nose: complex, honey, vanilla, sherry, raisins, blood oranges, black cherries, plums, dark chocolate, nutmeg, fresh herbs, hints of dried mushrooms, and cedar wood.
Palate: slightly waxy, dark chocolate, toffee, honey, blackberries, black cherries, raisins, prunes, allspice, nutmeg, black tea, sherry, oak and fading hint of peat.
Finish: long, with notes of raisins and sultanas, plums, dark chocolate, nutmeg, cinnamon, dash of black pepper, and oak.
