West Cork Distillers has been operating since 2003, founded by three friends – John O'Connell and brothers Dennis and Ger McCarthy.
Originally based at Union Hall in County Cork, after a decade, operations moved to larger premises in Skibbereen (also in County Cork). The distillery distills malt and grain whiskey and blends its own blend. West Cork uses locally grown grain, distills in four stills, and every drop of spirit is triple distilled. This blended whiskey, made from 75% grain and 25% malt distillates aged in fresh bourbon barrels, was finished for several months in IPA (Indian Pale Ale) barrels from Blacks Brewery in Kinsale, County Cork.
Aroma: lots of cereal flakes, hops, vanilla, apples, gooseberries, a handful of fresh herbs, notes of damp hay and oak shavings.
Taste: consistent with the aroma, cereals, green apples, quince jelly, lemon peel, vanilla, traces of hops and a pinch of herbal spices.
Finish : medium long, with notes of cereal, summer fruits, lemongrass and hops.
