Mortlach is the first of seven distilleries built in the capital of Scotch whisky, Dufftown (1823). The plant is equipped with 6 stills of different capacities and shapes, which work in a rather unconventional configuration.
One pair (wash still and spirit still no. 3) work as a tandem, while the distillery raw material from wash still no. 1 and 2 is divided into two parts - the first 80% goes to re-distillation in spirit still no. 2, while the remaining 20% (so-called tails) is directed to spirit still no. 1 (called The Wee Witchie) and triple distilled, of which only the middle fraction of the final batch is collected. As a result, the whisky is distilled 2.81 times. Mortlach 12 years old The Wee Witchie, a blend of distillates aged in bourbon and sherry barrels, debuted in the fall of 2018.
Nose: roasted almonds, tobacco, notes of leather and pencil shavings, raisins, plum jam, orange peel, toffee, a touch of cinnamon and oak.
Palate: orange jam, dried plums, raisins, caramel, milk fudge, candied ginger, nutmeg, cocoa powder and a hint of tobacco.
Finish: medium long, with notes of dried fruit, roasted nuts, spices and oak.
