Wolfburn Distillery (founded 2012) sits in Thurso, Caithness, about 350 meters from the remnants of the original Wolfburn, which operated from 1821 to the 1860s.
It started distillation in January 2013 and the first bottles of Wolfburn single malt were offered for sale in March 2016. The main part of malt is unpeated however in 2014 the distillery started producing lightly peated spirit (10ppm) as well and three years later the first peated whisky called Morven was introduced. Wolfburn is the most northerly distillery in the Scottish mainland; its name refers to a nearby freshwater source Wolf Burn.
Nose: soft with delicate trace of smoke, salted caramel, apples, pears, pine nuts, vanilla, hints of hay and tobacco.
Palate: mildly peaty, toffee, vanilla, baked apples, sweet cereals, roasted nuts, hints of pepper and sea salt and oak.
Finish: medium long, malty, with notes of vanilla, ginger, pepper and a wisp of smoke.
