Clairin is a spirit distilled from sugar cane, in the same process as rum, produced in Haiti. Many clairin factories are small, simple artisanal establishments, producing the spirit for the needs of their own village. Clairin is produced based on local varieties of sugar cane, without genetic interference, without the use of pesticides or herbicides. There is also no special selection of yeast strains, the production technology is based on 18th-century principles, bottling without filtration.
Clairin Communal is a spirit that is a blend of distillates from four locations - Cavaillon, Barraderes, Pignon and St. Michel de l'Attalaye. Produced in small alembics. In its bouquet we will find accents of papaya, cane sugar, pears, nectarines, white pepper, green chili peppers and herbal notes.
