Founded in 2011 by five friends, Glendalough Distillery “highlights Ireland’s heritage of spirits production.”
The word “Glendalough” means “Valley of the Two Lakes” and refers to a glacial valley in the Wicklow Mountains south of Dublin, famous for the monastery founded there in the 6th century by St. Kevin (an outline of his image adorns the label of every product from the company). Initially, the company tried to produce so-called seasonal gins, the formula of which changed depending on the season (the weather slightly affects the aroma and taste of the botanicals), after a dozen or so attempts, the recipe for the Wild Botanical Gin presented here was developed, whose ingredients are collected in the area surrounding the distillery at different times of the year – thorny broom flowers in spring, elderberries in summer, blueberries in autumn and sloes in winter. The basic ingredients remain juniper, angelica, coriander, liquorice, bitter almonds, orris root, common yarrow and orange peel. In addition to gin, the Glendalough brand includes poitín and Irish whiskey (the latter mainly comes from the Cooley distillery).
Glendalough Wild Botanical Gin has notes of forest floor, wildflowers, licorice, autumn berries and herbs enriched with juniper, pine needles and elderberry. It is a great component of Martini and French 75 as well as traditional gin and tonic.
