In 2009, Douglas Laing & Company launched Big Peat blended malt whisky, "the essence of Islay in one bottle".
A year later, it won the top prize in the Whisky Magazine poll in its category, and Jim Murray rated it 96 points in his own Whisky Bible. The Big Peat formula lists four basic ingredients, each of which has a significant part in the final palette - Caol Ila brings sweetness, Ardbeg hospital and earthy-peaty notes, Bowmore perfect balance, and Port Ellen elegance. Fred Laing also adds "a few secrets of the creator that he won't reveal even after a few toasts". The whisky is bottled at 46% abv and unchill-filtered.
Nose: fresh, smoky and marine, forest floor, barley malt, vanilla, green apples, lemons, walnuts, traces of cinnamon and cedar.
Palate : smoke and ashes, sea breeze, hay, salted nuts, white pepper, lemongrass, vanilla, toffee and a touch of oak.
Finish : long, salty and smoky, with notes of lemon peel, licorice, white pepper and hay.
