Journeyman Distillery, an investment by Bill Welter, was built in 2010 in Three Oaks, Michigan.
In 2000, Bill traveled to Scotland to study the history of golf and gain a deeper understanding of the sport, but his passion for whisky soon outstripped his interest in golf. Upon returning to the States, Bill completed an internship at Koval Distillery in Chicago before starting his own business. The distillery relies on locally grown grains and is one of a handful of producers offering kosher spirits. Today, Journeyman produces whiskey, brandy, rum, vodka and gin. The local Bilberry Black Hearts Gin is made with their own organic wheat spirit; the gin is formulated with juniper berries, lemon, bitter orange, cinnamon, coriander, anise, orris root, angelica and European bilberries. They are macerated for 24 hours and then distilled in small batches.
Journey Bilberry Black Hearts is quite an unusual gin, offering intense notes of forest berries interwoven with coriander, juniper and aniseed biscuits. In taste, a light berry tartness, notes of cinnamon, juniper and a touch of citrus. We recommend serving in Gibson and Red Snapper cocktails and with Indian tonic with the addition of a few berries.
