Wolfburn is one of Scotland's youngest distilleries (the first distillation took place in January 2013), although a distillery of that name operated between 1821-186(?) at a site approximately 350 metres away.
Wolfburn is based in Thurso, Caithness, making it the most northerly distillery on the Scottish mainland. Wolfburn single malt debuted in March 2016, followed a few months later by Aurora, a whisky blended from spirits aged in refill quarter casks (40%), first fill bourbon casks (40%) and fresh sherry hogsheads (20%). The name Wolfburn refers to the Wolf Burn, the water source of the original distillery.
Aroma: malt, barley grain, walnuts, apples, peaches, pears, a trace of sulfur and delicate sherry tones.
Palate: sweet barley malt, apples, pears, vanilla, honey, raisins, mixed nuts, a pinch of pepper and a drop of sherry.
Finish : medium long, slightly nutty, with a hint of honey and malt.
