The Kilchoman Genesis series was created in 2020 in cooperation with the German importer of the brand.
It is to consist of eight editions dedicated to the eight stages of Kilchoman whisky production – barley harvest, malting, peating, mashing, fermentation, distillation, maturation and bottling – lasting a total of 1,130 days. In the fourth stage of production, called mashing, the ground barley grain is sent to two mash vats, where it is repeatedly flooded with hot water and stirred to wash out the fermentable sugars. The result is a liquid called wort, which is pumped to the fermentation vats. The edition presented here uses whisky aged in bourbon barrels (75%), Oloroso sherry (5%) and cognac (20%); 3,000 bottles have been released.
Nose: smokey-fruity, pears, peaches, orange peel, toffee, vanilla, honeyed breakfast cereal, cinnamon, a pinch of pepper and traces of iodine.
Palate: honey, vanilla pudding, caramel, oranges, pink grapefruits, nectarines, banana cake, a hint of cinnamon and nutmeg and peat smoke in the background.
Finish: quite long, with notes of peat smoke, citrus, vanilla, caramel, milk chocolate, a pinch of mulled wine spice and oak.
