Dalmunach is one of Scotland’s newest and most technologically advanced distilleries, built by Chivas Bros., a subsidiary of Pernod Ricard, in 2014 on the site of the former Imperial Distillery.
The latter produced whisky from 1897 to 1998; in 2005 it was bought by Pernod Ricard but never resumed distilling, and in 2013 its buildings were demolished. The Dalmunach Distillery is equipped with eight stills (among the largest in the industry) and can produce 10 million liters of distillate per year, most of which will go into the group's portfolio of blends. The Dalmunach presented here, after basic maturation in American oak, was finished in a ruby port pipe cask (no. 281); bottled at 56.5% abv without chill filtration by The Vintage Malt Whisky Co. in the Cooper's Choice series in an edition of 360 bottles.
Aroma : red apples, meat cranberries, toffee, vanilla, brown sugar, allspice, cinnamon, cloves and oak.
Palate: wine, red currants, cherries, blueberry jam, toffee, caramel, cocoa powder, cinnamon, white pepper and subtle oak bitterness.
Finish : medium long, with notes of vanilla, red berries, cinnamon, ginger and oak tannins.
