Fred Laing's XOP series debuted in 2014, a dozen or so months after the division of Douglas Laing & Co.'s assets between the two Laing brothers.
XOP stands for Xtra Old Particular and refers to the finest single malt and single grain casks resting in the family’s warehouses. The Glenallachie 25 year old on display here was distilled in February 1992 and aged for three decades in a refilled bourbon cask (DL no. 16979). Bottled in December 2022 at cask strength (47.3% abv) and without chill filtration, in an edition limited to 190 bottles. Founded in 1967, GlenAllachie Distillery is based in Speyside. It has been owned by a group of private investors led by Billy Walker since 2017. (Producer’s tasting note.)
Aroma : the caressing scent of raspberry jam on warm, buttered rolls and juicy barley.
Taste : on the palate, rich, creamy sweetness, peaches in syrup, puff pastry and a subtle oak spiciness.
Finish: long, full of the sweetness of tropical fruits, soon replaced by barley malt and homemade pastries.
