Kilchoman Distillery began operation in 2005, the first distillery to open on Islay in 124 years.
The owners call it a “farm distillery,” as some of the grain used for distilling (around 25%) is sourced from nearby fields. The barley malted on-site has a phenol content of 20-25 ppm, while the barley delivered from the Port Ellen malthouse has twice that. An expansion completed in 2018 doubled the capacity of the facility to 480,000 litres of distillate per year. The limited edition French Inspiration No. 2 (1,260 bottles) presented here from April 2022 was intended for French importer La Maison du Whisky. It uses whiskies aged in bourbon (75%), Oloroso sherry (5%) and Sauternes (20%) casks.
Aroma : intense peat smoke, honey, vanilla, apricots, orange zest, mirabelle jam, marzipan, lemon grass, a pinch of pepper and a gust of salty breeze.
Palate: peat smoke, dark chocolate, salted caramel, apricots, grapes, cantaloupe, orange peel, lapsang souchong tea, honey, vanilla and a hint of licorice.
Finish : quite long, with notes of honey, vanilla, dark chocolate, orange peel, licorice, dried apricots, raisins and peat smoke.
