Kilchoman Distillery began producing whisky in 2005. The popularity it experienced over the next decade encouraged the owners to double production capacity to 460,000 litres per year in 2018.
Kilchoman is one of a handful of Scottish distilleries that malt barley, although its own malting plant provides around 25% of demand. The limited edition from 2022 presented here was intended exclusively for the French importer and distributor, Le Comptoir Irlandais. The whisky, distilled from malt with a phenolic concentration of 50%, was aged in three types of casks: bourbon (70%), Oloroso sherry (5%) and cognac (25%). 1,260 bottles were released.
Nose: peat smoke, sea breeze, vanilla, honey, milk chocolate, raisins, roasted chestnuts, orange peel, notes of nutmeg and pepper.
Palate : peat smoke, salted caramel, vanilla, red apples, chocolate-covered raisins, roasted almonds, black pepper, allspice and a touch of salty breeze.
Finish: medium long, with notes of peat smoke, vanilla, honey, dried fruit, cocoa, black pepper and oak.
