Based in the Yarra Valley, near Mlebourne, Four Pillars Distillery was established in 2013 by Stuart Gregor, Cameron Mackenzie and Matt Jones.
The four pillars of the company are: copper stills made by the German company Carl; water from the Yarra Valley naturally filtered through eucalyptus groves and dense forest undergrowth; botanicals and... a little bit of love, or love for the profession. Four Pillars Gin is distilled by Cameron Mackenzie, who after a 15-year career in the wine sector retrained as a distiller. Four Pillars Navy Strength (bottled at 58.8% ABV) differs from the basic version of Rare Dry Gin not only in alcohol content. Its formula is created by 13 ingredients: juniper berries, coriander, cardamom, cassia bark, star anise, lavender, angelica root, Tasmanian pepper, lemon myrtle, oranges, Australian lime (Finger lime), turmeric and ginger. This gin has won several prestigious awards, including a gold medal at the San Francisco World Spirit Competition in 2019.
Four Pillars Navy Strength Gin is a drink with an intense aromatic and flavor palette; in the aromatic bouquet a combination of juniper, cardamom and ginger with citrus notes (especially lime) and a bit of lavender. The taste is similar, a bit more juniper beautifully balanced with spices (mainly ginger and anise) and lime. The producer recommends serving it in Ginger Mule, Southside and Gimlet cocktails. It tastes great with tonic with a bit of ginger or mint leaf.
