Rye whiskey was the category that declined the most in popularity in the second half of the 20th century. Lack of demand was balanced by negligible supply, and only a handful of distilleries distilled from rye mash for 3 to 5 days a year.
The new millennium brought a complete change of fortune, but it took several years for producers to even slightly rebuild supplies. Pikesville Straight Rye was originally produced in Maryland (its name refers to one of the suburbs of Baltimore). It represents the style of the so-called Maryland Rye, more delicate in the palette than the much spicier Pennsylvania Rye. Since 1982, it has been produced by Heaven Hill Distillery in Kentucky. The current formula of Pikesville whiskey lists 51% rye, 39% corn and 10% malted barley.
Aroma: the spiciness of rye tempered with the sweetness of caramel and vanilla, traces of licorice and cloves, candied lemon peel and light herbal tones.
Taste : a beautiful clash of rye spiciness with the sweetness of honey and vanilla, traces of caramel and marzipan, a pinch of lemon pepper and oak.
Finish : long and slightly spicy, with notes of oak, vanilla and citrus.
