Zafra rum is produced in Panama, at the Las Cabras distillery. The plant was founded in 1919 as a cane sugar factory.
The plant, forgotten and overgrown with grass, was discovered in the 1990s by Francisco Jose Fernandez Perez and Carlos Esquivel. In an abandoned warehouse, they found a copper distillation column bearing the inscription "Cincinnati 1922". This discovery gave rise to a brand new distillery. There are currently five distillation columns in operation at Las Cabras, and rum is made here from molasses. The primary brand of rum produced in Las Cabras is Grander.
Zafra Master Series Aged 30 Years is a rum aged in American bourbon barrels and bottled in a limited edition each year. This version was released in 2016 and comes from an edition limited to 7920 individually numbered bottles.
Aroma: Vanilla, dried fruits, oak, vegetal notes, fudge, nutmeg.
Taste: Vanilla, honey, dried fruit, cherries, fudge, caramel, licorice, orange peel, oak, nutmeg.
Finish: Long, with spicy notes.
