Grace O'Malley Whiskey is named after the legendary 16th-century Irish pirate queen and daughter of the local Chieftain.
Grace O'Malley Spirits was founded in 2017 by Irish businessman Stephen Cope and his two German partners, Stefan Hansen and Fritz Hendrick Melle. The position of the blending master is held by Frenchman Paul Caris, previously associated with wine and cognac producers. Grace O'Malley is blended from double and triple distilled malt and grain whiskeys from John Teeling's Great Northern Distillery. The Dark Char Cask whiskey presented here uses distillates aged for up to 10 years, and the blend was finished in re-charred bourbon barrels. In 2021, it won a silver medal at the World Spirits Competition in San Francisco.
Nose: creme caramel, vanilla, cappuccino, roasted grain, sugared peanuts, milk chocolate, cinnamon, black pepper and charred oak.
Palate : caramel, vanilla, burnt toast with honey, prunes, bitter orange jam, a bit of pepper and oak tannins.
Finish: medium long, with notes of caramel, vanilla, toasted cereal, mocha, cinnamon and charred oak.
