- Caol Ila Distillery was established in 1846 by Hector Henderson. The distillery is currently owned by Diageo and after an upgrade completed in 2011 it is the biggest whisky producer on Islay with a capacity of 6.5 million liters of spirit per annum.

Caol Ila Distillery, built by Hector Henderson in 1846, is now owned by Diageo and following modernisation completed in 2011, is the largest distillery on Islay with a production capacity of 6.5 million litres of distillate per year.
Global sales of the brand have been slowly growing and currently stand at around 620,000 bottles. The Caol Ila presented here, distilled in February 2011, spent over 10 years in a refill hogshead cask DL 15248. Bottled at 48.4% abv and without chill filtration by Douglas Laing & Co. in the popular Old Particular series in August 2021 in an edition of 416 bottles. This whisky is part of a mini-series released under the slogan "Cheers to Better Days".
Nose : peat smoke and sea breeze, wet sand and rocks, seaweed, grilled pork neck, caramel, lemon peel, white pepper, notes of vanilla and charred oak.
Palate: peat smoke, sea salt, vanilla, caramel, green apples, grapefruits, pears, lemongrass, white pepper, hints of licorice and cigar ash.
Finish : quite long, with notes of vanilla, salted caramel, licorice, white pepper, seaweed and charred oak.
