Valfather is the third and final installment in the Highland Park Viking Legends triptych, which began in 2017 with Valkyrie (the second was Valknut).
The graphic design is overseen by Jim Lyngvild, a Danish graphic artist of Viking descent. Valfather is a nod to Odin, the most powerful god in the mythology of the northern peoples. According to a spokesman for the distillery, Valfather is the peatest Highland Park, intended to reflect the character of the most powerful of the gods. The whisky was aged in refill barrels and bottled at 47% abv in August 2019, and its graphic design is inspired by the 8th century rune stones "Stora Hammars" found in Gotland.
Nose : peat smoke, spring meadow, vanilla, honeycomb, crème brûlée, apples, pears, nutmeg, black pepper, cedar shavings and a distant breath of sea breeze.
Palate : rich, vanilla cream, honey-roasted nuts, salted caramels, toffee, bitter orange jam, dried apricots, pepper, a touch of cocoa powder and oak.
Finish : long, peaty and fruity, with notes of bitter oranges, grapefruit, black pepper, salted almonds and oak.
