The history of the vineyard began long before Leo Hillinger founded it. From an early age, he had contact with wine, thanks to his father, who traded it. He gained his first winemaking skills in Rhineland-Palatinate, then developed his knowledge of economics, because he knew that only a combination of these two aspects would bring him success. He also traveled to California and South Africa, where he also learned the secrets of the art of winemaking. He added to this an iron consistency in action, because not everything worked out from the beginning, but in the end he created an unconventional wine project, gaining more and more recognition.
In 2012, he began a collaboration with a winery in South Africa – Constantia Glen, which has lasted to this day. Thanks to this, he also produces some extraordinary wines there. He also currently manages a nearly 120-hectare vineyard in Andau, where he produces wines for literally every occasion, from affordable to more advanced, prestigious Hill labels.
Hillinger Blue Flag
Wine from the Blaufrankisch variety, grown organically, which has been certified AT BIO 302. After harvesting and selecting the grapes, it is vinified by spontaneous fermentation in stainless steel tanks, then 1/3 of the wine matures in oak barrels for 12 months. In the nose it is full of aromas of dark fruits, berries and blackberries, with the addition of spicy accents of pepper and cinnamon. On the palate it is well-built, it may seem a bit sharp due to the spicy flavors, but after a while it settles down well, presenting fruit flavors supported by soft tannin and lively acidity. The finish is long and quite strong, with an emerging earthy accent and a hint of spices.
It tastes best served at a temperature of 14-16 degrees. It is recommended to decant it before serving to maintain the right level of aeration of the wine and allow it to present all its qualities. In culinary combinations, it works well with grilled red meats, cold cuts and cheeses, but also pasta dishes with creamy sauces, even those slightly more spicy.
