Wolfburn is a young Scottish malt distillery, although the chronicles mention a Wolfburn Distillery that operated between 1821-186(?) on a property approximately 350 metres away.
Based in Thurso, Caithness, it is the most northerly distillery on the Scottish mainland. It opened in January 2013, and its first single malt was released in March 2016. It has been matured mainly in ex-bourbon casks, with a small addition of quarter casks from Islay, and bottled without chill filtration. The label does not state an age, but the counter-label mentions a three-year maturation. The name Wolfburn refers to the Wolf Burn, the water source of the original distillery.
Aroma: malty and slightly spirituous, green apples, pears, lemon peel, cereals, a trace of ginger, a light breath of sea breeze and a hint of peat smoke.
Taste : sweet, malty, vanilla, honey, apples, grapes, milk chocolate, traces of ginger and pepper, a pinch of salt and a subtle hint of smoke.
Finish : not too long, slightly spirity, lemon peel, pepper and a bit of oak.
