Signatory Vintage, founded in 1988 by Andrew and Brian Symington, is a leading publisher and distributor of whisky.
Few remember that Symington started with just £100,000 and nearly went bankrupt several times in the first five years of operation. The name "Signatory" means Signatory and originally Symington intended to hire someone famous to sign each edition. The first Signatory release was Glenlivet 1968, but before the company found the right signatory, there was no trace of the whisky. The Port Dundas presented here, distilled on 26 June 1995, spent over 28 years in a bourbon hogshead cask (no. 64902) and was bottled at cask strength (54.8% abv) on 28 August 2023, in an edition limited to 176 bottles.
Aroma: vanilla, cotton candy, milk fudge, ripe bananas, apples, marzipan, milk chocolate, cinnamon, a bit of oak and pencil shavings.
Palate: caramel, vanilla pudding, grapes, apples, banana cake, raisins, candied ginger, cinnamon, a touch of licorice and oak tannins.
Finish: quite long, with notes of sweet bread, caramel, vanilla, maple syrup, ginger, white pepper and oak.
