Maison Fillioux was founded in 1880 by Honoré Fillioux. The family owns the 25-hectare Domaine de la Pouyade vineyard in the heart (the “Golden Triangle”) of the Grande Champagne growing region.
The Ugni Blanc grapes grown there produce wine with low alcohol and tannins, but high acidity. The scale of Maison Fillioux's operations is small, and the company is currently headed by the founder's great-great-grandson, Pascal Fillioux, who personally oversees the entire production process - from grape growing to distillation and blending - and his son Christophe. Their work is the Cep d'Or ("Golden Grape"), an XO cognac, blended from its own eaux-de-vie aged for at least 12 years. In 2017, this cognac won a silver medal at the International Wine & Spirits Competition.
Aroma: floral-fruity, spring meadow, jasmine, lilies, honeydew melon, figs, bananas, ripe apples, nut shells, notes of vanilla, caramel and oak.
Palate: raisins, dried plums, figs and apricots, walnuts, vanilla, cinnamon, a touch of anise and cumin and oak tannins.
Finish: medium long, with notes of sweet dried fruit, cinnamon, roasted nuts, vanilla, caramel and oak.
