Product description
Hermitage Cognac Company was founded in 1987 by David Baker. The company offers a range of unique cognacs, bottled in aged and vintage versions, using eaux de vie from small, non-commercial producers.
The company is based in Bath and Segonzac (the latter in the heart of the Grande Champagne growing region). Around 80% of its bottled Cognacs come from Grande Champagne, with the remaining 20% coming from Petite Champagne and Borderies. The company uses distilled water to dilute the Cognacs before bottling. The 1991 Vintage edition presented here is based on eaux de vie distilled from Ugni Blanc grapes with a small addition of Folle Blanche, sourced from a small producer based in the heart of Grande Champagne.
Aroma: toffee, dark chocolate, roasted hazelnuts, raisins, dried figs, a hint of pineapple, cinnamon, nutmeg, notes of forest floor and oak.
Palate: chocolate-coated raisins, dried figs and dates, grilled pineapple, oranges, coffee liqueur, toffee, mixed nuts, nutmeg, oak and a pinch of pepper.
Finish: long, with notes of coffee, dark chocolate, orange peel, cinnamon, candied ginger, nutmeg and oak.
