Founded in 1988 by Andrew and Brian Symington, Signatory Vintage is now a leading independent publisher and distributor of whisky, widely respected by consumers.
Signatory has a tradition, much appreciated by whisky lovers, of labelling each cask strength with information on the cask number and type, the date of filling, bottling and the number of bottles to which the release is limited. The Allt-a-Bhainne 21 years old presented here was distilled on 26th July 2000, aged in refill hogsheads and finished for 12 months in a fresh sherry butt (no. 6). Bottled on 13th August 2021 at cask strength (52.4% abv) in the prestigious Cask Strength Collection in an edition of 703 bottles.
Nose : dark chocolate, raisins, black cherries, dried plums and cherries, caramel, roasted almonds, nutmeg, cinnamon, balsamic vinaigrette and sherry-soaked oak.
Palate: sherry, raisins and sultanas, chocolate-covered cherries, dried apricots and plums, hazelnuts, toffee, mocha, cinnamon, cloves, notes of black pepper and oak.
Finish : quite long, with notes of sherry, chocolate, roasted almonds, dried dark fruits, cinnamon, a pinch of pepper and oak.
