Evan Williams Bottled-in-Bond recalls an extremely important piece of legislation (Bottled-in-Bond) that set the standard for whiskey producers in the late 19th century.
At the time, over 99% of whiskey was not compliant with any standards, and in 1897, the United States Congress passed legislation to protect both producers and consumers. Whiskey designated as Bottled-in-Bond had to come from a single distillery, be distilled during a single season (January through June or July through December of the year), be aged for at least 4 years in federally supervised warehouses, and be bottled at 100 proof (50% abv). Evan Williams ranks second in bourbon sales statistics with over 3 million cases (2020).
Nose: lots of caramel and vanilla, maple syrup, apples, plums, cherries, a pinch of pepper, roasted peanuts and charred oak.
Palate : vanilla pudding, caramel, milk fudge, banana cake, nougat, pepper, traces of anise and tobacco and a bit of oak.
Finish : medium long, with notes of vanilla, caramel, dried fruit, a mixture of spices and oak.
