Pure Milk Vodka is the invention of a dairy farmer from West Dorset, England, named Jason Barber.
The inspiration to start work on obtaining vodka from cow's milk was the need to diversify dairy production on a farm with over 250 cows. A personal interest in alcohol, including vodka, was also important. Black Cow was founded in 2012 by Jason Barber and Paul Archard, responsible for the creative side of the enterprise.
Alcohol is produced exclusively from cow's milk. Curd and whey are obtained from milk. The latter contains all the sugars necessary for alcohol production. It is fermented using a special strain of yeast, resulting in something like a milk beer. This is distilled, and the finished distillate is filtered three times. The vodka does not contain any flavor additives, does not contain gluten and is also lactose-free, as it was processed into alcohol using yeast.
In its aroma, Black Cow vodka offers accents of sweet, fresh grass, with a hint of honey and forsythia flowers. The taste is perfectly smooth and creamy, with notes of almonds and vanilla. The finish is delicately peppery.
