M&H (Milk & Honey) Distillery has been operating since 2013, built by Gal and Lital Kalkshtein.
The plant is based in Tel Aviv and is a widely recognized producer of whiskey (kosher, of course). Its production capacity is 800,000 liters of distillate per year (currently used at 25%), and the development of the production cycle was assisted by Dr. James Swan, who died in 2017, one of the most respected independent master distillers. Whisky is not the only drink in the M&H offer, it also includes Levantine gin (in four versions) produced on the basis of twice-distilled barley spirit. Its formula includes juniper berries, origanum syriacum (zaa'tar, also known as Lebanese oregano), lemon peel, oranges, chamomile, verbena, cinnamon and black pepper. They are macerated for 48 hours, then distilled a third time.
In the aromatic bouquet of Levantine gin we discover delicate notes of juniper, lemon, oriental spices (zaa'tar) and a touch of cinnamon. On the palate a combination of citrus and juniper, garden herbs, cinnamon and subtle notes of malt and nuts. We recommend serving with ice cubes or in Martinez and Negroni cocktails.
