In 2008, Pears Lyons, who is of Irish descent, opened a distillery in Lexington, Kentucky.
Four years later, he began distilling in a joint venture in Carlow, his native Ireland. In 2017, the distilling equipment was moved to Dublin, to the renovated and converted St. James’s Church for whiskey (and gin) production. Sadly, Pears Lyons died the following year, leaving the company to his wife Deirdre and son Mark. The 7-year-old Pearse Distillers Choice presented here is a blend of malt (38%) and grain (62%). The blend uses the distillery’s own malt whiskey, distilled in Cardow and aged mainly in ex-bourbon casks from sister distillery Town Branch, with a small addition of KBBA (Kentucky Bourbon Barrel Ale) and sherry casks.
Aroma : slightly malty, vanilla, yeast cake, raisins, lemon and orange peel, cloves, cinnamon, pine needles and fresh oak.
Palate : honeyed cereal, vanilla, green apples, pears, grapefruit, golden syrup, white pepper, candied ginger and oak.
Finish : medium long, with notes of apples, bitter oranges, cocoa, vanilla, cloves, ginger and toasted oak.
