In January 2012, after nearly 20 years of renovations, the newly equipped Willett Distillery resumed distilling.
The facility is equipped with both a still and a copper pot still, and produces bourbon and rye whiskey. The latter debuted in 2014 and was met with enthusiastic reception. Willett uses two rye formulas – the so-called high rye (74% rye, 11% corn and 15% barley malt) and low rye (51% rye, 34% corn and 15% barley malt). Small batch editions are usually combined from both distillates and bottled at cask strength. These are still young whiskeys, but the company announces that it will bottle older ones as maturation progresses.
Aroma: spicy with a strong note of rye grain, cloves, cinnamon, ginger, licorice, anise, pine resin and mint leaf.
Taste : caramel, vanilla, pepper, ginger, anise, cloves, a pinch of herbal spices, mint and oak.
Finish : quite long, with notes of rye bread, pepper, anise, ginger, a bit of caramel and oak.
