In 2007 Tom Lix founded Cleveland Whisky Company with the mission to drastically speed up whisky aging process. After couple years of experiments he invented the formula of aging newly distilled spirit for six months in new, charred American oak barrels, then put it in steel tanks along with chopped up barrels. Such mixture then goes through agitation and pressurization to force age the whiskey over the course of a week. Cleveland Black Reserve debuted in 2013 and currently enjoys distribution in 12 states, Germany and Japan. Cleveland Whiskey Company is a small operation producing about 1000 bottles a week. They are sold out on a spot.
Nose: quite spirity, cornflakes, vanilla, toffee, caramel, pepper, touch of ginger and oak.
Palate: buttered popcorn, cotton candy, vanilla, caramel, grapefruits, black pepper, dash of cinnamon and oak.
Finish: not too long, oaky, with notes of vanilla and pepper.
