Koval Distillery was founded in 2008 by Robert and Sonat Birnecker and is the first legal distillery in Chicago since prohibition. Koval is 100% grain-to-bottle operation that sources its grains from an organic co-op in the Midwest. Their bourbon is quite unorthodox, it contains 51% corn and 49% millet. The latter is a gluten-free ancient sustenance grain grown in Asia and Africa and used in spirits industry there. Koval Bourbon is aged for less than four years in heavily charred small oak barrels (30 gallons capacity). It scored gold medal at 2014 International Whisky Competition.
Nose: sweet and fruity, apples, mango, vanilla, caramel, pepper, buttered toast and charred oak.
Palate: pretty smooth, apricots, plums, vanilla, caramel, maple syrup, dash of pepper, traces of tobacco and leather.
Finish: medium long, with notes of apricots, vanilla, caramel and charred oak.
