Koval Distillery, a 2008 investment by Sonata and Robert Birnecker, is the first legal distillery since Prohibition to be headquartered in Chicago. The facility distills from organically grown grains supplied by a nearby cooperative.
The formula of Koval bourbon is far from traditional, in addition to 51% corn, it lists 49% millet. The latter is an ancient, gluten-free grain grown primarily in Africa and Asia, where it is also used in the spirits industry. Koval bourbon is aged for less than four years in heavily charred 30-gallon small oak barrels. In 2014, it won a gold medal at the International Whisky Competition.
Nose : sweet, fruity, apples, mango, vanilla, caramel, a dash of pepper, buttered toast and charred oak.
Taste: quite mild, apricots, plums, vanilla, caramel, maple syrup, a pinch of pepper, traces of tobacco and leather.
Finish: medium long, with notes of apricot, vanilla, caramel and charred oak.
