His search for outlets for the financially declining Maison Ferrand took him to the Caribbean and Latin America. The sale of cognac barrels to rum producers was soon linked to rum purchases, the first attempts at blending, bottling and distribution. Today, Maison Ferrand is, in addition to the producer of Ferrand cognac and Citadelle gin, a significant selector, blender and distributor of rums from every corner of the world. As the producer himself says about himself, in this industry, careful maturation of the drink, attachment to tradition, diversity and double maturation count.
Plantation Rum Fiji Islands 2004 is a rum distilled at the Rum Co. of Fiji on the island of Fiji. Made from molasses and distilled in a column still, it was additionally filtered through coconut charcoal. It matured for 17 years in the tropics, in American white oak bourbon barrels, then transferred to Ferrand cognac barrels, where it spent another 2 years in a continental climate.
Nose: Intense, with notes of coffee, vanilla and fudge, peaches, orange peel, bananas, poached pears, walnuts and cocoa.
Palate: Oily and spicy, with notes of quince, citrus peel, coconut, balsam and cinnamon.
Finish: Very long, notes of smoky molasses, cocoa, almonds, cherries, apples and cloves.
