Single Pot Still, considered by many to be the quintessential Irish whiskey, is returning to the market in full splendor after years of oblivion.
This type of whiskey distilled from a mixture of malted and unmalted barley is not the result of the distiller's trial and error, but rather was forced upon it by the introduction of the malt tax by the Irish government in 1725. The Redbreast brand debuted in 1939. It was a product of the Jameson Distillery in Dublin, and the distribution rights were held by the W. & A. Gilbey company. Today, Redbreast is part of the Pernod Ricard range. It is distilled by the Midleton distillery from a mash consisting of equal parts malted and unmalted barley, and maturation takes place almost exclusively in sherry casks.
Nose : rich, nutty and slightly oily, vanilla, honey, dried plums and figs, bitter oranges, rosehip jam, candied ginger and a hint of pine resin
Taste : fruity with a pleasant spiciness, bananas, raisins, oranges, vanilla, marzipan, honey, cinnamon, walnuts, traces of tobacco and pepper
Finish : long, fruity with a wonderful sherry note, honey, nutmeg and a handful of raisins
