Soon after Edradour Distillery was acquired by Signatory Vintage Ltd. the new owners started releasing dozens of expressions finished in different types of wood, some of them single cask.
The one presented here, distilled in December 1993, spent over 14 years in plain hogsheads before being finished for 51 long months in a fresh ex-Sauternes cask. Bottled in February 2013 at natural strength (53.2% abv) with an outrun of 303 bottles.
Nose: sweet and fruity, apricots, honeydew melon, grapes, walnuts, maple syrup and delicate oakiness.
Palate: fruity sweetness of apricots and grapes nicely balanced with nuttiness and hints of nutmeg, some honey and oak as well.
Finish: medium long, initially sweet soon becoming oaky and spicy.
