Tomintoul is a mid-size distillery, equipped with two pairs of stills produces 3.3 million liters of spirit per annum. Since 2000 it has been owned by Angus Dundee Distillers, the company controlled by the Hillman family with most revenue coming from blending operations. Tomintoul is a Kosher Accredited distillery and uses almost exclusively ex-bourbon wood, with a little exception of ex-sherry and ex-port casks employed for finishing maturation. The 21 years old expression was introduced in 2011 to fill a gap in the range between 16 years old and 33 years old after phasing out 27 years old. The whisky was aged predominantly in ex-bourbon barrels with a little addition of refill casks.
Nose: sweet and creamy, apples, pears, grapes, vanilla, toffee, breakfast cereals, buttered toast, touch of hay and delicate oaky notes.
Palate: lots of ripe fruits, apples, pears, gooseberries, raisins, vanilla custard, toffee, honey, touch of licorice and delicate nutty and oaky notes.
Finish: medium long, fruity and nutty with notes of vanilla and licorice.
