In 1987 John Teeling bought the disused ethanol distillery, renamed it Cooley and after significant investment started producing grain and malt whiskeys. Within the first decade of operations Cooley has more problems than successes but entered the new millennium as fairly well established company. After selling the distillery to Jim Beam Global in December 2011 Teeling founded Teeling Whiskey Company, an independent bottling company, and in 2015 converted Great Northern Brewery in Dundlak into Teeling Distillery. Teeling Single Grain whiskey is sourced from Cooley Distillery and bottled at 46% abv without chill-filtration. The whiskey was aged for around 5 years in Cabernet Sauvignon barrels from California.
Nose: sweet and slightly floral, vanilla, honey, brown sugar, corn flakes, baked apples and touch of grapefruit.
Palate: dried apples and pears, cranberry relish, toffee, buttered toast, hints of cinnamon and white pepper.
Finish: medium long, sweet cereals, cinnamon, allspice and hints of oak.
