High West, founded by David Perkins in 2007, is the first legal distillery in the state of Utah since 1870.
The company produces bourbon and rye whiskeys sourcing juice from MGP Indiana and various distilleries in Kentucky. American Praire Reserve is named after a group working to create the largest wildlife reserve in the lower 48 states. High West donates 10% of post tax profits from this whiskey to the project. American Praire Reserve is a vatting of two straight bourbons – 6 years old from MGP Indiana (75% corn, 21% rye and 4% malted barley) and 10 years old Four Roses distilled from mash of higher rye content (60% corn, 35% rye and 5% malted barley).
Nose: butterscotch, caramel, vanilla custard, strawberry preserve, cinnamon, mint, aniseed, hints of leather and oak.
Palate: rich, vanilla, caramel, buttered popcorn, nougat, cherries, strawberries, nutmeg, cinnamon and oak.
Finish: fairly long, with notes of caramel, vanilla, licorice, cinnamon, mint and oak.
