In 2001 Balvenie Distillery did experimental run from heavily peated malt.
Eight years later David Stewart, the company Malt Master, decided to transfer the heavily peated whisky to the traditional casks and put selected 17 years old Balvenie whisky into casks that previously held the peated spirit. After four months he married their content with 17 years old Balvenie finished in new American oak casks. And the Peated Cask was born…
Nose: delicate floral aroma, violets and lavender wrapped into peat smoke, distinctive oaky and vanilla notes.
Palate: after initial smoke fades the flavors of vanilla and honey come up, finally cinnamon and nutmeg are joining the pack.
Finish: sweet and spicy with distant smoke.
