In the early 2018 Diageo, the owner of George Dickel Distillery in Tullahoma, Tennessee changed its name to Cascade Hollow Distilling Company.
In fact the original name of the distillery was Cascade Hollow and George Dickel bought controlling interest there in 1884. Dickel Tennessee whisky has been distilled from mash composed of 84% corn, 8% rye and 8% malted barley. The whisky undergoes charcoal mellowing process but while Jack Daniel’s drips whisky through maple charcoal filled vats Dickel put its whisky into such vats and lets the two mingle for about a week. The Superior Nº12 Brand comprises whisky aged on average from 8 to 10 years and bottled at 45% abv.
Nose: rich, popcorn, vanilla custard, caramel, raisins, baked apples, candied orange peel, dried apricots, honey, hint of cinnamon and charred oak.
Palate: buttered popcorn, apple pie sprinkled with cinnamon, vanilla, caramel, butterscotch, honey-roasted nuts, dash of pepper and oak.
Finish: long and corn driven, cornflakes, popcorn, vanilla, caramel, honey, dried fruit, dash of cinnamon and pepper and charred oak.
