Shinobu Distillery is a brainchild of Ken Usami, founder of Niigata Beer Company 20 years ago.
In 2017 Mr. Usami obtained the whisky license and started construction of the distillery in Niigata Prefecture, the place known in Japan for its “Three Treasures” – snow, rice and sake. We do not know the formula of Shinobu bended whisky, it certainly was not distilled at this location and very likely the components come from outside of Japan. What we know is that it is a blend of 50% malt and 50% grain whisky initially aged in both ex-bourbon and ex-sherry casks, then the blend is finished in Japanese Mizunara oak cask. The whisky scored gold medal at the 2019 San Francisco World Spirit Competition.
Nose: soft, sweet cereals, buttered toast, roasted nuts, coconut biscuits, poached pears, lemon peel, touch of mint, hints of hay and oak.
Palate: smooth and buttery, vanilla, apples, pears, candied lemons, sultanas, milk chocolate, white pepper, cloves and touch of oak.
Finish: medium long, with notes of butter cookies, vanilla, candied fruits and hints of sandalwood.
