Glenallachie Distillery is located in Speyside and equipped with two pairs of stills can produce about 4 million liters of spirit per annum.
Until 2017 the distillery was owned by Chivas Bros, subsidiary of Pernod Ricard, and supplied malt to many blends, mainly Clan Campbell. Things changed the next year after the distillery was acquired by a private consortium comprising Billy Walker (ex-owner of BenRiach Distilling Company), Graham Stevenson and Trisha Savage. The new core range (featuring four expressions) was released in the summer of 2018, Koval Rye Quarter Cask Finish followed in 2019. The whisky was originally aged in white American oak barrels then transferred into ex-rye whiskey quarter casks sourced from Chicago based Koval Distillery.
Nose: freshly baked rye bread, pepper, cinnamon, nutmeg, vanilla, honey, butterscotch and hints of oak shavings.
Palate: apple pie sprinkled with cinnamon, cloves, pepper, ginger, lemon peel, vanilla, butterscotch and dash of dried herbs.
Finish: fairly long and spicy, with notes of toasted rye bread, cinnamon, pepper, ginger and oak.
