Heaven Hill 27 years old bourbon is a one time bottling from 2018.
The limited edition of less than 3000 bottles is comprised of 41 barrels produced between 1989 and 1990 at Old Heaven Hill Springs Distillery in Bardstown, before it was distroyed by fire in 1996 (after the fire the company purchased Bernheim Distillery in Louisville and moved distillation there). All but five of the barrels were aged on the first and second floors where increased humidity and evaporation caused the proof to drop. When all 41 barrels were vatted together the natural barrel proof was uncommonly low (94.7 proof). More than 80% of the bourbon considered for this release was lost to “Angel’s share”. The bourbon comes in elegant bottle placed in wooden box bearing double H indicating the Heaven Hill name.
Nose: pretty strong (yet not overwhelming) oaky notes, cigar box, tobacco, caramel, vanilla, prunes, dried apricots, nutmeg, cinnamon and cocoa powder.
Palate: lots of oak tannins, dark chocolate, tobacco, leather, caramel, toffee, vanilla, pepper, nutmeg, clove and touch of bitter orange marmalade.
Finish: long and oaky with lots of baking spice, tobacco, leather and restrained
