In the early 2019 Walsh Whiskey Company added new premium edition to their popular Writer’s Tears whiskey range.
According to Bernard Walsh, the company founder, the new expression is a unique blend of single malt and single pot still whiskeys finished for nine months in Limousin oak casks from the renowned family cooperage of Allary that have been seasoned by the Legaret family’s Deau XO Cognac for between 10 to 15 years. Only 12 French oak casks were used for that edition, what translates to an outrun of roughly 6500 bottles. Our bottle was filled from barrel # 6432.
Nose: honey, toffee, ripe apples and pears, bananas, summer berries, orange zest, raisins, dash of pepper and oak.
Palate: vanilla cream, milk chocolate, toffee syrup, apples, nectarines, raspberries, raisins, black pepper, dash of nutmeg and oak.
Finish: pretty long, with notes of summer fruits, vanilla, pepper and delicate oaky dryness.
