Kaiyō Ltd. is an Independent Bottling Company with headquarters in Hong Kong, founded by the former Akashi employee, Mr. Watanabe.
Via his connections in the industry Mr. Watanabe purchases ‘spooned’ whiskies and ages them further in Mizunara (Japanese oak) barrels. Japanese oak barrels are very rare thus very expensive (trees has to grow for 200 years before they will make into barrels), with price tag going up to $7,500 each. The final maturation of Kaiyō whisky takes place during 3-months long sea voyage from Osaka, where the movement, temperature variation and air pressure allowing Mizunara oak to contract and expand and consequently speed up the release of its delicate flavors and aromas.
Nose: light and floral, spring meadow, hay barn, incense, coconut shavings, vanilla, orange peel, green tea and hints of sandalwood.
Palate: extremely smooth, pineapples, bananas, vanilla, toffee, milk chocolate, cinnamon, hints of nutmeg and coconut shavings.
Finish: medium long, light, with notes of tropical fruit, exotic spice, orange peel and sandalwood.
