Daniel Prieto Preston, the owner of Cacao Prieto, a chocolate making company, founded Widow Jane Distilling Company in Red Hook, Brooklyn in 2012. Daniel grew up in Rosendale, NY, home to the limestone mines. When the last mine closed in 1970 and its owner passed away the Rosendale Limestone Mine became known as the Widow Jane Mine. Widow Jane Distilling Company does not distill bourbon and rye whisky, it sources spirit in Kentucky and Indiana and process it in Brooklyn with pure water of Widow Jane mine. Widow Jane Rye Mash Whiskey was aged in ex-bourbon barrels and cut to 45.5% abv with water form Widow Jane Mine.
Nose: sweet and spicy, cinnamon, cardamom, white pepper, lemons, apricots, butterscotch and delicate grassy and oaky notes.
Palate: vanilla, cinnamon, cloves, baked apples, orange peel, walnuts, cappuccino and charred oak.
Finish: medium long, with notes of cinnamon, vanilla, charred oak and bunch of garden herbs.
