Caol Ila Distillery was established in 1846; in 1974 all the buildings, except for warehouses, were demolished and new distillery was built. An expansion completed in 2011 made Caol Ila the biggest distillery on Islay with capacity of 6.5 million liters of spirit per annum (almost as much as Lagavulin, Laphroaig, Bowmore and Ardbeg combined). Caol Ila single malt has been Independent Bottlers’ sweetheart for quite some time and every year more than few bottlings hit the market. The Signatory expression presented here comprises whisky distilled on September 25, 2007 and aged in two ex-bourbon barrels (nos. 315335 + 315337) for 9 years. Bottled on October 5, 2016 at 46% abv as part of The Un-chillfiltered range.
Nose: fresh, peat smoke, iodine, seaweed, lemon juice, green apples, moist hay, touch of eucalyptus, vanilla and oak.
Palate: smoky, hints of tar, seaweed salad, vanilla, salted caramel, apples, gooseberries, candied lemon peel and charred oak.
Finish: medium long, peaty and briny with sweet fruity and vanilla notes.
